6 Cloves Garlic - Chopped
1 Tsp Salt
3 Tbsp Olive Oil
2 Cups Beef Stock
2 Tbsp Tomato Paste
2 Bay Leaves
1/2 Tsp Thyme
2 Cups Red Wine

6 Pieces Sirlion Steaks 25mm Thick
4 Tbsp Flour
6 Pieces Bacon - Chopped
1 Large Carrot - Diced Small
1 Large Onion - Diced Small
2 Sticks Celery - Diced Small
1 Small Red Capsicum - Diced Small
1 Small Green Capsicum - Diced Small
300gms Button Mushrooms
Season flour with salt and pepper. Coat beef with seasoned flour, shake off excess flour. Seal in oil, remove from pan, place in casserole dish. Add vegetables to pan ,bay leaves and garlic to coat with oil. Add tomato paste cook for 2 minutes add 2 tablespoons of seasoned flour cook for 1 minute pour wine stir and let boil add stock, thyme bring back to boil taste for seasoning pour vegetable mixture over meat and cook in oven for 2 hours at 160 degrees, check half way through cooking for liquid level. Serve with mashed potatoes.
