1 Tbsp Parsley - Chopped Fine
4 Tbsp Olive Oil
2 Tbsp Parmesan Cheese -Grated Fine
1 Tbsp Dry Oregano
1 Cup Dry Breadcrumbs
1 Egg - Beaten with a dash of milk or water
1 Cup Cheese - Grated Pizza Mix
4 Pieces Veal Rump - Pounded till thin
2 Large Tomatoes - skinned, seeded and diced
Ask your butcher to pound veal. Combine egg, salt, pepper and parsley in shallow tray. Combine breadcrumbs parmesan and oregano in a plate and mix thoroughly. Dip veal in egg mixture to coat then into breadcrumbs. Place in fridge for crumbs to set. Heat oil in large frying pan, fry veal until golden brown. Arrange veal in shallow baking pan top each piece with tomato and grated cheese and bake at 190 degrees until cheese has melted and meat is heated through. Topping and baking optional, serve with Salad.
