BEEF FILLET WITH HORSERADISH CRUST

Ingredients:

1/2 Cup Creamed Horseradish
Freshly Ground Black Pepper
3 Tbsp Olive Oil
1 Whole Beef Eye Fillet - Trimmed of fat and sinew
3 Tbsp Plain Flour
2 Tbsp Mustard with Grains
1/2 Tsp Salt
2 Tbsp Brown Sugar

Method

Heat oven to 220 degrees C. Combine horseradish, mustard, sugar, flour, salt and pepper. Spread paste over beef. Pour oil into a roasting dish and place in oven. When very hot, place beef in dish and roast for 20 minutes. [This will result in medium-rare beef; cook longer if desired]. Allow meat to rest before serving with roasted baby beetroot and Yorkshire pudding.
