LIMONCELLO

Ingredients:

8 Lemons
1 1/2 Cups Water
1 1/2 Cups Castor Sugar
750mls vodka

Method

Remove the rind from the lemons using a small sharp knife, then remove the pith from the rind. Lightly score the glossy side of the rind using the tip of the knife. Push rind into a sterilised, 1 litre capacity bottle. Pour in vodka, seal tightly & leave to infuse in a cool dark place for 8 days. Combine sugar with 1 1/2 cups of water in a saucepan and, stirring slowly bring mixture to the boil until mixture has disolved. Remove from heat and cool syrup. Strain vodka mixture through fine muslin into a large jug. Add sugar syrup to strained vodka and stir well. Divide mixture equally between two sterilised 750ml bottles (they won't be full), seal tightly and place in freezer. Serve limoncello straight from freezer. Limoncello can be stored in freezer indefinately. Makes about 1.2 litres
