BARRAMUNDI SALAD

Ingredients:

1 Bunch Parsley
1 Large Spannish Onion
1 Whole Chilli
5 Tbsp Thai Fish Sauce
1 1/2 Tbsp White Sugar
1/2 Cup Lime Juice
1Kg Steamed Barramundi Fillets

Method

Steam the Barramundi for about 5 minutes or until fish turns opaque. Allow to cool and cut the fillets into bite size pieces and place in a large bowl. Combine the lime juice, sugar, fish sauce and chilli and pour over the fish. Mix the Onion through the fish and garnish with the parsley.
Serve chilled
